I know that the Big 4 Firms like to brag about how much paid time off they give people. How much of this time do people actually end up taking?

Gotta make sure to put it on your schedule, I take all of mine–25 PTO days and a good handful of extended holidays, ie: Thur&Friday off for T-giving, Monday off for Holidays that land on Tuesday, etc.
