My BEC NTS expires May 2, when I’m currently scheduled to take the exam. Unfortunately I feel like I need more study time, but I cant see what days are open after May 2nd because that’s the day my NTS expires. I am going away on Vacation starting Memorial day, so I want to see if there are any days available between the 2nd and the 25th. If so, I will not sit on the 2nd, get a new NTS and schedule the exam for the 20th or so, but I fear there will only be days available while im on vacation.

You should be able to use the seat availability tool to see what days are available without the need for an NTS.
